Caesars are loved by many — but not always enjoyed by all. While you can omit the alcohol to make them friendly for those who would skip it, they are traditionally made with fishy ingredients that make them unsuitable for vegans and vegetarians. In this recipe, pickle juice steps in to bring the briny-ness that clam juice normally would, and thank goodness we live in a time where vegan Worcestershire sauce exists.

Vegan Caesar Cocktail

The base makes about 2 ¾-3 cups, or enough for 7-8 cocktails, and it can be stored in the refrigerator for up to 3 to 5 days before using to make the cocktail.


Vegan Clamato Juice Base:

  • 2 cups vegetable juice cocktail
  • 6 tbsp water
  • 2 tbsp lemon juice
  • 4 tsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tbsp vegan Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tbsp green olive juice
  • 1 tbsp gherkin pickle juice
  • 10 drops Tabasco hot sauce
  • 1 tsp chili powder
  • 1 tsp ground pickling spice
  • 1 tsp celery salt
  • ½ tsp each flaked sea salt and freshly ground pepper
  • ⅛ tsp garlic powder
  • 2 vegan roasted seaweed sheets (3 x 2-inch pieces from snack packages), optional

Vegan Caesar Cocktail:

  • 1tsp celery salt
  • 1 lime wedge
  • Ice, as needed
  • 1 oz vodka (or use 1 ½ oz if desired)
  • 3 oz Vegan Clamato Juice Base
  • ¼ tsp Vegan Worcestershire sauce
  • 4-5 drops Tabasco hot sauce
  • Pinch each flaked sea salt and pepper
  • 1 rib celery
  • 1 cucumber spear
  • 1 carrot spear
  • 1 lemon wheel
  • 1 gherkin
  • 1 pickled onion
  • 1 queen green olive


Vegan Clamato Juice Base: 

Stir together all of the ingredients for the base. Chill until ready to use. Remove the seaweed snacks before using. 

Vegan Caesar Cocktail:

Place the celery salt in a small dish. Rub the rim of a lowball glass with the lime wedge and then dip it in the celery salt; reserve the lime wedge. 

Fill a cocktail shaker with ice. Add the vodka, Vegan Clamato Juice Base, vegan Worcestershire sauce, hot sauce, salt and pepper. Squeeze reserved lime wedge over top. Shake until frosty. 

Thread the gherkin, olive and onion on cocktail skewer. Garnish the cocktail with the celery, cucumber, carrot, lemon and the cocktail skewer. 

Yield: Makes 1 cocktail
