One sauce, two recipes: Chicken Parmesan and Eggplant Parmesan

One of the simplest tomato sauces ever. Plus it yields a double batch so you can make both versions at once (perfect for if you’re cooking for both omnivores and vegetarians).

If you've shied away from making Chicken or Eggplant Parmesan at home, we wouldn't blame you — layered dishes with multiple components can seem like a lot of work. But in these two recipes, you'll find one of the simplest tomato sauces you've ever come across, plus it yields a double batch so you can make both versions at once (perfect for if you're cooking for both omnivores and vegetarians). The eggplant version uses your oven to pre-cook crispy slices that won't get soggy from frying.
