There are a myriad of ways to roast a chicken, and almost as many ways to repurpose it for delicious lunches. Roast your own chicken at home, or pick up a rotisserie chicken from the store (I make a trip to my local butcher each weekend to grab a spiced BBQ version). Either way, using the juicy, succulent meat hiding beneath that bronzed, crisped-up skin will help lighten up your weekly lunch prepping task.
