Lemongrass Soda

Perfect for sipping on a hot summer day, this easy homemade Lemongrass Soda is packed with a sweet citrus flavour.


3 stalks lemongrass
1/3 cup honey
1 cup water
1 litre sparkling water
Juice of 2 limes
2 limes, thinly sliced
Small handful mint leaves
Ice, as need


Just use the bottom 4-inches of the lemongrass stalks for the soda infusion, reserve the remaining for garnishing, if desired. Smash and bruise the lemongrass bottoms and finely chop.

Add chopped lemongrass, water and honey to small saucepan over medium heat. Bring to a boil. Remove from heat and let cool completely, about 1 to 2 hours. This gives enough time for the lemongrass to steep and create an infusion for the soda. Strain through a fine-meshed sieve.

To serve, add lemongrass infusion, lime juice, lime slices and mint to a large pitcher. Top with sparkling water. Pour into glasses with ice and garnish with lemongrass stalks, if desired. Serve.
