Summer Vegetable Salad

A mix of all your favourite garden veggies are drizzled with a simple olive oil and sherry vinaigrette.


1/2 red onion, chopped
1 yellow pepper, chopped
1 stalk celery, chopped
1 cucumber, chopped
2 vine ripe tomatoes, chopped
1 clove garlic, minced
1/4 cup extra virgin olive oil
1 1/2 tbsp. sherry vinegar
Salt and freshly ground pepper, to taste
Handful Italian parsley, chopped


Add red onion, yellow pepper, celery, cucumber, tomato and garlic to large bowl. Drizzle with olive oil and sherry vinegar and season with salt and pepper. Toss to combine. Taste and adjust seasoning. Finish with parsley.

Yield: 4 to 6 servings.
