Cam Dobranski's apricot compote recipe

Here is a simple recipe for an apricot compote to have with cheese:

1 Cup diced dried apricots
1 cup white wine
2 teaspoon chopped fresh rosemary
1/2 teaspoon chilli flakes
2 Tablespoons sugar

1. Small dice apricots and place in a sauce pan
2. Finely chop fresh rosemary and add to apricots
3. Add wine & sugar to apricots and bring to a simmer
4.Reduce white wine until reduced and syrupy
5. Take off heat, cool
6. Serve with a nice blue cheese such as Bress Blue or a Stilton
