Like eating cookies, but also feeling fit and looking young? Never fear, we’ve got the recipe for you. Not only is it full of anti-aging, anti-wrinkle and anti-oxidant ingredients, it’s also just plain delicious!
¾ cup almond flour
¾ cup brown rice flour
1 tsp baking powder
1 tsp cinnamon
1 tsp sea salt
¼ cup maple syrup
1 large avocado mashed and pureed
1 cup blueberries
½ cup goji berries, rehydrated
½ cup macadamia nuts, chopped
½ cup hemp hearts
½ cup dark chocolate chips or chunks
Soak goji berries in water for 10 minutes to rehydrate. Whisk together almond flour, brown rice flour, baking powder, cinnamon and sea salt. In a separate bowl add eggs, mashed avocado and maple syrup. Beat until combined and fluffy. Mix dry ingredients into wet in 3 additions.
Fold in blueberries, drained goji berries, macadamia nuts, hemp hearts and dark chocolate. Drop spoonfuls of cookies onto a parchment lined sheet pan. Bake at 350F for 8-10 minutes.
