100 Years of Canadian Railway Recipes

Haute cuisine served on fancy china used to be standard on railway dining cars in Canada. Today, the food is still refined (for the most part), but the dining experience on trains has changed. 
 
Exporail, the Canadian railway museum in St-Constant, has put together a collection of recipes, archival photos and stories from  railway dining cars that reflects those changes. It's called 100 Years of Canadian Railway Recipes: All aboard for an historic dining experience.  Peter Murphy, vice president of the Board of Directors of Exporail spoke about assembling the recipes and photos for the book.
