2 tbps olive oil
1 red onion, diced
3 cloves of garlic, chopped
1 large can chopped tomatoes, no salt added
1 large can crushed tomatoes, no salt added
1 can of chick peas, no salt added
1 can of red kidney beans, no salt added
1 can of black beans, no salt added
1 cup edamame, shelled
½ cup hot sauce
2 tbsp chili powder
½ cup chopped cilantro
3 cups fresh spinach
½ cup white chia seeds
1. In a pot on medium heat, cook garlic, onions, chili powder and hot sauce.
2. Add chopped tomatoes, crushed tomatoes, chick peas, red kidney beans, black beans and edamame. Allow vegetables to cook down.
3. Add cilantro and chia seeds. Give it a good stir.
4. Slowly add spinach and cover the pot. Let simmer on low heat for at least an hour.
