This is the perfect side dish to accompany Theresa's maple garlic pork tenderloin.
2 tbsp extra virgin olive oil
2 cloves garlic , minced
1/2 tsp grated ginger root
1/2 cup fresh mushrooms , sliced
1 sweet red pepper, chopped
1/4 tsp pepper
1/4 cup apple cider vinegar
2 tbsp grainy mustard
3 tbsp water
1 package baby spinach
- Heat oil in a fry pan over medium heat.
- Add garlic and ginger and cook for one minute, then add mushrooms, sweet pepper and pepper.
- Whisk in cider vinegar, mustard and water.
- Divide salad into 4 serving plates. Spoon hot dressing over salad.
