Portobello Pizzas

These are fast and delicious ways to have indulgent food without any starch. Thanks Joshna for sharing another tasty recipe!

Portobello Pizzas

Makes 4

Ingredients

4 portobello mushrooms, stems removed
¼ cup olive oil
kosher salt & freshly ground pepper
½ cup simple tomato sauce
16 slices pepperoni
4 large leaves basil, very finely chopped
1 cup mozzarella cheese, grated

Directions

1. Preheat broiler. Line a baking sheet with parchment paper and set aside. Drizzle olive oil over mushrooms, rubbing it in to coat mushrooms completely. Season lightly with salt and pepper and arrange gill side up on baking sheet. Broil for 2 minutes, or until edges start to brown. Remove from heat and allow to cool slightly.

2. Spread 2 tbsp tomato sauce over the surface of each mushroom cap, then arrange 4 slices of pepperoni on each. Sprinkle chopped basil over pepperoni, then top with ¼ cup of cheese.

3. Broil pizzas for another 5 minutes, or until cheese is browned and starting to bubble. Remove from heat, allow to cool and serve.
