Port Cranberry Sauce with Star Anise


Once you try this flavourful version from Chef Jonathan Collins, you won't want to go back to storebought cranberry sauce!

Port Cranberry Sauce with Star Anise


1 pkg (16 oz ) cranberries, fresh or frozen
3/4 cup brown sugar
zest and juice of 1 medium orange
3 pieces star anise
1/2 cup ruby port
pinch kosher salt


  1. Add port to hot saucepan, slightly reduce to remove alcohol.
  2. Combine rest of ingredients in saucepan. Bring to boil and reduce to simmer for 20-30 minutes to desired consistency (the sauce will thicken considerably when it cools). Remove star anise or leave for garnish.
