Pickled Onions

Joshna Maharaj's pickled onions.

1/2 red onion, thinly sliced
juice of 2 limes
1/4 tsp salt

In a small bowl, combine onion slices, lime juice and salt; toss well to coat. Set aside for 20 minutes, stirring occasionally. Great piled high on Joshna's ultimate veggie burger.
