Peggy’s Recipe for Every Age

Peggy's recipe, perfect for all ages, offers the perfect balance of nutrition and flavour and best of all, it's a recipe made with ease.

Ingredients

spicy maple dijon salmon
1 Whole salmon, filleted
1/3 cup whole grain Dijon mustard
½ teaspoon turmeric
3 tablespoons maple syrup
1.5 tablespoons adobo sauce (from chipotle peppers)
1.5 tablespoon fresh rosemary, chopped
quinoa salad
2 cups quinoa, cooked
1 cup grape tomatoes, halved
½cup cucumber, diced
½ cup Kalamata olives, pitted and chopped
1/4 cup extra virgin olive oil
1 Tbsp oregano
1 lemon wedge, squeezed
to taste salt and pepper

Preparation

Spicy Maple Dijon Salmon
  1. Place salmon, skin side down on large pan lined with parchment paper. Place all remaining ingredients in a bowl and mix well to combine  to make a sauce.
  2. Brush sauce all over salmon, covering well. Bake at 350 degree oven for 10-12 minutes to finish cooking.

 

Mediterranean Quinoa Salad
  1. Add all ingredients to a bowl and mix well. Refrigerate before serving.
