spicy maple dijon salmon1 Whole salmon, filleted
1/3 cup whole grain Dijon mustard
½ teaspoon turmeric
3 tablespoons maple syrup
1.5 tablespoons adobo sauce (from chipotle peppers)
1.5 tablespoon fresh rosemary, chopped
quinoa salad2 cups quinoa, cooked
1 cup grape tomatoes, halved
½cup cucumber, diced
½ cup Kalamata olives, pitted and chopped
1/4 cup extra virgin olive oil
1 Tbsp oregano
1 lemon wedge, squeezed
to taste salt and pepper
Spicy Maple Dijon Salmon
- Place salmon, skin side down on large pan lined with parchment paper. Place all remaining ingredients in a bowl and mix well to combine to make a sauce.
- Brush sauce all over salmon, covering well. Bake at 350 degree oven for 10-12 minutes to finish cooking.
