Muffin Tin Meat Loaf: 3 Delicious Ways To Make It

This is comfort food done right! You won't be able to resist these cute and mouth-watering mini meatloaves. Kary Osmond shows us quick and easy ways to mix up the classic comfort food dish — and you get three kinds for the price of one!

Ingredients

1/2 cup bread crumbs
1/4 cup milk
1 egg
1/4 cup onion, finely chopped
1/2 teaspoon worchestershire sauce
1/2 teaspoon granulated garlic
1/2 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 pound ground beef
1/2 pound ground pork
1/4 cup chili sauce
1/2 cup cheddar cheese, grated
2 pieces bocconcini

Preparation

  1. Preheat oven to 375 F. Lightly spray muffin tin with vegetable oil spray. Set aside.
  2. In a large bowl, mix together bread crumbs, milk, egg, chopped onion, worchestershire, garlic, basil, salt, and pepper and mash with a fork until chunky paste forms. 
  3. Add ground beef and pork and knead with your hands until combined. 
  4. Shape into 6 balls then place each in muffin tin cup.
  5. For chili-cheese meatloaf: Brush two balls with chili sauce and sprinkle with cheese.
  6. For bacon-wrapped meatloaf: Cover the last two meatballs with bacon.
  7. For cheese-stuffed meatloaf: Stuff the next two meatballs with bocconcini and herbs.
  8. Bake until the meatballs register 160 degrees, about 20 minutes.
  9. Turn on broiler and broil until bubbly, about 2 minutes.
