Mixed with the low-fat, low-calorie proteins of feta cheese and turkey bacon, and topped with the super antioxidant power of cranberry, this salad is a clean and delicious dish everyone will love.
1 bunch kale, destemmed, leaves chopped
6 slices turkey bacon, cooked and chopped
4 oz feta cheese, crumbled
1 large lemon
1/4 cup olive oil
to taste kosher salt and freshly ground black pepper to taste
1 cup dried cranberries
- In a large bowl, pour lemon juice over the chopped kale. Massage the leaves until dark and silky. Let sit for a few minutes to marinate.
- Toss the salad with feta cheese, turkey bacon, olive oil and craisins. Add salt and pepper to taste.
