Coconut Flour Banana Pancakes
One of Joy’s favourite breakfasts is pancakes, but not just any old pancake! These are vegetarian, dairy-free and gluten free. The secret is in the coconut flour that we use. Coconut flour is great because it’s gluten-free while still being really dense and fulfilling. Coconut flour is also a source of protein, but not gluten protein. In fact it's nearly 25% protein. It's also extremely high in fiber. Coconut flour has the highest level of fiber among all other flours. It's 58% fiber in comparison to wheat flour which is only around 27%. So it makes you feel full. This fiber slows the release of glucose making it a low glycemic food.
Berry Chia Pudding
Joy loves this pudding because it's like eating dessert for breakfast! Plus it's easy to make, you can make it the night before and simply let it sit in your fridge, it's a total time-saver. Also, if you cannot eat yogurt, this is a wonderful dairy-free alternative which makes it easy on the digestive system. Chia seeds are wonderful for digestion and detoxification as they are extremely high in fiber.
