Jo’s Yogourt Caesar Salad

Who knew a Caesar salad could taste this good and still be good for you?!

Makes 8 cups

1/2 cup low-fat stirred yogourt
1/2 cup Parmesan, shredded and divided
1 clove garlic, minced
1 tbsp fresh lemon juice
1 tbsp apple cider vinegar
1 tsp each Dijon mustard and Worcestershire sauce
1/4 tsp each sea salt and pepper
hot sauce, to taste
12 cups romaine lettuce, chopped
2 cups whole-grain croutons
8 oz. turkey bacon, cooked until crisp and chopped

  1. To prepare dressing, whisk together yogourt, 1/4 cup Parmesan, garlic, lemon juice, cider vinegar, Dijon mustard, Worcestershire, salt, pepper and hot sauce until smooth.
  2. In a large mixing bowl, toss lettuce, croutons and turkey bacon. Top with remaining Parmesan.

Why stirred yogourt, you ask? During the production process, warm, cultured milk is incubated in a large vat, cooled, then stirred, giving it its characteristic creamy yet slightly runny texture, which is perfect for smoothies and salad dressings!
