Chef Rosa loves avocados! Here's her go-to recipe for a simple, classic guacamole.
3 ripe avocados
1/4 white onion, diced
1 jalapeño or serrano chile, stemmed, seeded and ﬁnely chopped
1 Roma tomato, cored, seeded and diced
1 clove garlic, minced
1 to 2 tablespoons fresh lime juice
2 tablespoons cilantro, chopped
1/2 teaspoon salt
- Coarsely mash the avocado using a potato masher or a fork. In a small strainer, rinse the chopped onions under cold water and shake off the excess. Mix the onion, jalapeño pepper, tomato, garlic, lime juice, salt and 1 tablespoon cilantro.
- Transfer to serving dish and garnish with remaining chopped cilantro.
