Everyone likes a good tangy, crunchy coleslaw, especially one made by Chef Joshna! Letting this sit for a little while before serving really gives the flavours a chance to make friends. This is great as a side dish, or on a sandwich.
3 cups green cabbage, shredded (about ½ cabbage)
2 cups carrots, peeled and shredded
½ small white onion, shredded
¼ cup olive oil
¼ cup mayonnaise
½ cup white vinegar
1 tsp Dijon mustard
2 tsp honey
1 tsp kosher salt
½ tsp freshly ground pepper
1. Combine olive oil, mayo, vinegar, mustard, honey, salt and pepper in a small bowl and whisk together.
2. In a large bowl, toss together cabbage, carrots and onion. Pour vinaigrette over cabbage mixture and toss well with your hands to coat the slaw completely with the vinaigrette. Allow to sit for 15 minutes before serving.
