Easy and Healthy Pancakes


Let's face it. Store-bought pancake mix is so much easier than scratch. Bump up the health value of your favourite mix with a few ingredients that add fibre and omegas, as suggested by Brandie Weikle.

Easy and Healthy Pancakes


1 large egg
3/4 cup milk
1/2 cup plain Greek yogurt
1 cup store bought buttermilk pancake mix
1/4 cup wheat germ
1/4 cup quick oats
1 tbsp ground flax seeds
1 tsp baking soda
1 tsp butter
1 tbsp canola oil, divided


  1. In a large mixing bowl, whisk together egg, milk and yogurt. Add pancake mix, wheat germ, oats, flax and baking soda, mixing just until combined. If the batter is too thick, add a little more milk. Let sit 5 minutes to activate the baking soda.
  2. Heat butter and 1 teaspoon canola oil in nonstick frying pan over medium heat. Make pancakes in batches, cooking 2–3 minutes per side, adding oil only if needed to prevent sticking.
  3. Keep warm until ready to serve. Serve with maple syrup and fresh berries if desired.
