Let's face it. Store-bought pancake mix is so much easier than scratch. Bump up the health value of your favourite mix with a few ingredients that add fibre and omegas, as suggested by Brandie Weikle.
1 large egg
3/4 cup milk
1/2 cup plain Greek yogurt
1 cup store bought buttermilk pancake mix
1/4 cup wheat germ
1/4 cup quick oats
1 tbsp ground flax seeds
1 tsp baking soda
1 tsp butter
1 tbsp canola oil, divided
- In a large mixing bowl, whisk together egg, milk and yogurt. Add pancake mix, wheat germ, oats, flax and baking soda, mixing just until combined. If the batter is too thick, add a little more milk. Let sit 5 minutes to activate the baking soda.
- Heat butter and 1 teaspoon canola oil in nonstick frying pan over medium heat. Make pancakes in batches, cooking 2–3 minutes per side, adding oil only if needed to prevent sticking.
- Keep warm until ready to serve. Serve with maple syrup and fresh berries if desired.
