This easy and flavourful recipe from Chef Chris Brown turns cauliflower into a version of grain-free "rice," perfect for a fresh-tasting stir fry.
1 head cauliflower, cut into florets
1 tbsp sesame oil
1 tbsp water
1 lime, juiced and zested
1/2 cup fresh cilantro, roughly chopped
1 tbsp chopped ginger
1 tbsp chopped garlic
1 tbsp chopped shallots
1/4 cup sliced green onions
1/2 long red chili, sliced thinly
1/2 tbsp rice wine vinegar
to taste kosher salt
Garnish1/2 cup kimchi, sliced, optional
- Grate cauliflower florets or pulse in a food processor until it resembles rice. Set aside.
- Heat a large frying pan on high heat. Add sesame oil, garlic, ginger, shallots and red chili. Cook for 2 minutes.
- Add cauliflower and water and continue to cook for an additional 4-5 minutes. Season with salt to taste Add lime juice, zest, cilantro, green onions and rice wine vinegar and toss. Top the dish with kimchi and serve.
