This delicious twist on a Caesar salad is great with grilled steak or chicken. Serve salad warm or cold. From In The Kitchen's Stefano Faita.
1 large head broccoli, cut into florets, blanched or steamed, drained well
3 tbsp mayonnaise
Juice of 1 lemon
1/4 cup grated Parmesan cheese
3 tbsp olive oil
1 tbsp Dijon mustard
1 tsp Worcestershire sauce
2 garlic cloves, minced
to taste salt and freshly ground pepper
2 slices pancetta or bacon, cooked and chopped
for garnishing Parmesan cheese
- Combine mayonnaise, lemon juice, Parmesan, olive oil, Dijon mustard, Worcestershire sauce, garlic, and salt and pepper.
- Add broccoli and toss to combine. Finish with pancetta and freshly grated Parmesan, or use a vegetable peeler to garnish with shards of Parmesan cheese.
