These simple and delicious Sicilian-style ice cream sandwiches from In the Kitchen's Stefano Faita take only a minute to assemble. Brioche buns are classic but you could substitute any sweet bread, such as challah rolls, hot cross buns or even doughnuts.
6 small brioche buns, cut in half
2 scoops raspberry, vanilla, or pistachio gelato
handful pistachios, sliced almonds or fresh raspberries, for garnishing, optional
1. Sandwich a scoop of gelato in bun. Garnish with chopped nuts or raspberries.
