Beet Goat Cheese Dip


The natural sweetness of beets combines beautifully with the richness of goat cheese. When beets are in season, this dip is one of Joy's favourite snacks. Beets are a superfood favourite!

Beet and goat cheese dip.


6 or 7 medium beets, peeled and cut in chunks
1 tbsp grapeseed oil
1 clove garlic
3/4 cup soft goat cheese
1/2 tsp sea salt


1. Preheat oven to 350F

2. Place beets in a roasting pan or baking dish with  a lid and drizzle with oil

3. Cover and bake until fork-tender, 35-45 minutes, sitrring once after 25 minutes

4. Let cool for 10-20 minutes

5. In a food processor, combine beets, garlic, goat cheese and sea salt

6. If your food processor is not large enough, blend in batches

7. Blend until smooth

8. Serve with crackers or veggies 

Serving Size: makes 2 to 3 cups depending on size of beets
