Serves a family of 4
1 head cauliflower, cut into florets
1 lemon, cut in half and thinly sliced
½ cup pitted olives
3 sprigs each rosemary and thyme
1 navel orange
1/4 cup roughly chopped flat leaf parsley
3oz parmesan cheese
Sea salt and freshly ground black pepper to taste
Preheat oven to 450F.
In a large bowl, toss cauliflower with olive oil, olives, lemon, rosemary, and thyme. Using a vegetable peeler, peel 3 strips of orange rind and toss with cauliflower. Season with salt and pepper.
Transfer cauliflower mixture to a parchment lined baking sheet and roast in bottom 1/3 of oven for 15 min, until lightly browned.
While cauliflower is still warm, toss with parsley and top with freshly grated parmesan cheese.
