If you're looking for a refreshing cocktail, this one's a surefire winner! Simon Ho's pretty punch tastes like summer in a glass.

1/4 cup cucumber, chopped
1 1/2 oz. gin
1/2 oz. Aperol
1/2 oz. simple syrup
squeeze fresh lemon juice
dash Angostura Bitters (optional)
8-10 balls cantelope or watermelon, frozen
- Add cucumber to shaker glass; muddle.
- Pour in gin, Aperol, simple syrup and lemon juice. Fill shaker with ice and shake.
- Fill serving glass with melon balls, then double-strain cocktail into glass. Cheers!
