We are amazed by how simple it is to make a classic daiquiri with any fruit you love. Simon Ho took us through the steps and reminded us that the daiquiri is one of the oldest drinks around. This version is not like what you get at a resort...it's shaken, not blended, and has just a hint of sweetness.
CLASSIC DAIQUIRI
Ingredients
1 ½ oz white rum
1 oz fresh lime juice
½ oz simple syrup**
Ice
Handful of fresh strawberries, or bananas, or blueberries...whatever fruit you like best
What to do...Cut your fruit of choice into small cubes and add to shaker glass. Muddle the fruit with a spoon or a wooden handle. Add rum, lime juice and simple syrup. Add a few ice cubes and shake vigorously. Add ice to your favourite glass. Strain cocktails and pour into glass. Garnish with some fresh fruit.
**Simon's Tip:Make a small batch of simple syrup and keep it in your fridge for months. It's a great addition to your bar and can be used in a multitude of cocktails. Here's how to make it. Take a small glass bowl and fill it to the halfway mark with granulated white sugar. Pour hot water into the bowl to the rim. Mix well until all sugar is dissolved. Pour your simple syrup into a squeeze bottle and store in fridge.
