Meatloaf is a classic comfort food and it seems everyone has their own secret, family recipe -- including the Sabados family! Steven's mother, Irene Sabados, dusted off her recipe book and came by the show to share her favourite meatloaf recipe, which contains one very different surprise ingredient. Can you guess what it is?
Ingredients
2 lbs. ground beef
1/2 cup dried breadcrumbs
1 egg, beat slightly with fork
3/4 tsp salt
2 to 3 cups mashed potatoes (does not have to be exact)
2 large eggs, boiled till hard, 10 min.
1/3 to 1/2 cup Miracle Whip (1/2 cup if using 3 cups of mashed potatoes, 1/3 cup if using 2 cups of mashed potatoes)
1/3 cup grated Parmesan cheese
1/4 to 1/3 cup very finely chopped celery
1 green onion, finely chopped
salt & pepper to taste
Method
Combine meat, crumbs, egg and salt - mix well. On wax paper, pat meat mixture evenly to a 12" x 14" rectangle. Combine mashed potatoes, finely chopped hard-boiled eggs, salad dressing, Parmesan cheese, celery and green onion. Mix and season to taste with salt and pepper.
Spread potato mixture evenly over meat and roll up like a jelly roll, starting at narrower end.
Chill several hours or overnight in fridge Slice roll in 10 slices, approximately 1 1/4" on each slice. Spray jelly roll pan with Pam and bake slices in oven at 350 degrees Fahrenheit for 25 to 30 minutes.
Tips:
- Instead of beef, you might consider using a leaner option, such as ground chicken or turkey. For a super flavourful version, combine pork and veal or add chopped Pancetta to your beef.
- To make a perfect hard-boiled egg place the whole raw egg(s) in cold water with some vinegar and salt and bring to a boil. As soon as the water boils, turn off the heat and cover the pot for 10 minutes. To cool hard cooked eggs down quickly, run cold water over them.

1 cup Miracle Whip
1/3 cup whole milk
1 green onion, finely chopped
Method
Combine all and heat over low temperature. Poor over your veggies and rolls. Enjoy!
