Grilled Cheese Three Ways

It's a go-to meal for adults and children alike but it doesn't have to be just plain bread and cheese!

Steven showed us three ways to make grilled cheese, using delicious and nutritious Canadian cheese!

If you're lactose intolerant, it doesn't mean you need to skip the cheese! Try Mozzarella and aged cheeses like Cheddar and Swiss that contain almost no lactose.

Recipes:

Cheddar and Apple Sandwich
Serves 1

2 slices bread (preferably walnut sourdough or multigrain)
1T unsalted butter
1 t honey mustard
1 oz thinly sliced Cheddar
1 Granny Smith apple, thinly sliced

1 - Butter each slice of bread and place bread, butter side down, on the cutting board.
2 - Spread 1 slice of bread with mustard, top with the Cheddar and the apple slices. Sandwich with the remaining bread and toast lightly in a pan or pannini press until cheese is just melted.

Antipasto and Mozarella Foccacia Sandwich
(Serves 1 hungry or 2 not-so-hungry)

1 (10-ounce) loaf round focaccia, cut in half horizontally
1T Olive Oil
1 jar, prepared Antipasto
1/2 C (2 ounces) shredded Mozzarella cheese

1 - Heat a panini press or large non-stick skillet over a medium heat. Brush the exterior of the Focaccia with Olive Oil, lay bread (oil side down) on a cutting board.
2 - Spread the Mozarella, on 1 half of the bread. Spoon about 2 T of the Antipasto on top, sandwich with the other piece of Foccacia and press down lightly.
3 - Add sandwich to press or pan -if going for the pan option place a cast-iron or heavy skillet on top of sandwich; press gently to flatten. Cook 2 minutes on each side or until bread is lightly toasted (leave cast-iron skillet on sandwich while cooking). Cut into 4 wedges.

Havarti, Avocado, Turkey and Wraps with Chipotle Mayo
Serves 2

For chipotle mayo, blend:
1 C Helman's prepared Mayo
Tabasco sauce (to taste)
Lime juice (to taste)

For Wraps:
2 scallions, thinly sliced
2 9- to 10-inch flour or whole-wheat tortillas
1/2 C coarsely grated Havarti (about 2 ounces)
1 whole ripe Avocado, halved, peeled and sliced
1/4 lb thinly sliced smoked turkey breast (option: use leftover roast turkey or chicken)
6 slices pre-cooked bacon, warmed

1 - Arrange tortillas on a work surface and divide Havarti, turkey, bacon, and scallions evenly between them. Drizzle some chipotle mayo over filling and gently roll up tortillas.
2 - In a lightly oiled skillet or Panini press toast rolls, starting with seam sides down, over moderately high heat, turning them, until golden on all sides, about 3
