
Ingredients:
* 1 cup of quinoa (rinsed very well)
* 5 green onions, thinly sliced
* 2 cloves of garlic (pureed)
* some fresh finely chopped thyme
* 1 cup of frozen peas (thawed)
* 3 tablespoons of grape seed oil or olive oil
* 1/3 cup of lightly toasted pecans (roughly chopped)
* 2 1/2 cups of low sodium chicken broth (or water, apple juice)
Method:
Let 2 1/2 to 3 cups of chicken broth (or apple juice) come to a rapid boil in a large sauce pan. Place the well rinsed Quinoa and thyme into the boiling broth. Lower the heat to medium-ish and simmer until all liquid has absorbed. Meanwhile in a separate saucepan lightly caramelize the onions and garlic with just a little of the oil. When the quinoa has absorbed the broth add the sautéed green onions, garlic, toasted pecans and peas (the peas will heat up in prepared quinoa) and stir. Adjust seasoning with a little salt and pepper to taste- How easy is this recipe? Yeah love it!
