Say you have a last-minute dinner party. What's the easiest thing to make to impress your guests?
An antipasto platter - especially if you have access nearby to Italian, Greek, Spanish or Portuguese ingredients.

What's the one thing you make sure to always have in your fridge?
Eggs

What's the one kitchen tool you can't live without?
A good knife, and to extend to two tools, the second would have to be a big cutting board.

What's your favourite ingredient right now?
Apples - it's the middle of the winter. Right after them come citrus - blood oranges and ruby grapefruit.

If you had to eat one meal for the rest of your life, what would it be?
Grilled cheese sandwiches with Dijon mustard smeared on really good wholegrain bread and old, old, old Cheddar cheese. Serve with a zippy salsa.

Cooking: Natural talent or learned skill?
There's no end to learning how to cook - there are always new challenges, new techniques, new cuisines, new ingredients.

If you couldn't be a chef for some random reason, what would you do with yourself?
As I'm not a chef, I would train to be a pastry chef.
