Adrian's Crockpot Vegetable Soup

2 large potatoes cut into small bits
1 medium-large onion chopped
2 carrots chopped
2 celery stalks chopped
2 garlic cloves chopped
2 bay leaves
1 green or red pepper diced
1 tsp dried oregano
1/4 tsp salt
1 can diced tomatoes
2 cups sodium reduced chicken stock or vegetable stock
1 can red kidney beans, drained and rinsed (can substitute any beans you like - just make sure if you are using dried beans that they are softened before putting in slow cooker)
Put all the ingredients in the slow cooker. Feel free to put in additional vegetables or substitute the ones on the list (I like corn, some people like zucchini. Basically anything you have in the fridge) Top with water so fully covered. Cook on slow for 6-8 hours or until all the veggies are soft. Take out bay leaves before serving.
If you want a bit more flavour, you can add other spices - I sometimes like a 1/4 tsp of cumin, as well as pepper.
Another possibility is to add 1/4 cup of chopped parsley and cook on high for the last 20 minutes. Take bay leaves out before you do this.
