The Dish: Crockpot Season

The winter is the perfect season to haul out the crockpot. And so, this week, Radio West's Adrian Nieoczym tried his hand at a recipe. You can hear that here:

The recipe:

It's pretty simple, take a small whole chicken, rinse it well and pat it dry.
Put it in the crockpot surrounded by cut up potatoes, carrots, onions, garlic and other veggies you want. Sprinkle ground pepper, salt and other spices (I like paprika) on the top of the chicken. Cover with a mix of 50% apple cider, 50% water so that it's just below the top of the chicken. The liquid should be at least a couple of inches below the top of the crockpot. Cook on low for approx. 4-7 hours or until the chicken is thoroughly cooked (best checked with a meat thermometer.) Take it out of the liquid, but be careful, it will be very tender so will fall apart easily.
