Recipe for Baked Asparagus Fries


1/2 cup ground almonds
1 cup panko crumbs
1 pound asparagus
2 eggs, lightly beaten
salt and pepper to taste
3/4 cup flour

Dredge asparagus spears in flour and shake off excess (not much will stick, but that's okay.)
Dip each spear in egg wash, followed by panko mixture
Place on lightly oiled cooking sheet
Bake for 15-20 minutes or until crispy and lightly browned
Drizzle with balsamic vinegar or lemon juice
