Mini Cucumber Bite
Slice cucumber into thick rounds
Hollow out with a melon baller
Dice tomatoes, onions, peppers, and cucumber insides
Mix with Greek dressing or olive oil with Mediterranean herbs and lemon juice or vinegar
Place in scooped-out cucumber
Top with feta cheese and kalamata olives
