The Dish: Lavender

It's harvest time at the Okanagan Lavender and Herb Farm in Kelowna. Owner Andrea McFadden stopped by with some culinary treats from her farm.

Lavender Lemonade
2 cups boiling water
1 cup white sugar
3 tbsp dried lavender or 1 cup fresh lavender
8 cups cold water
1 cup lemon juice

Steep lavender in boiling water for 15 minutes in a stainless steel covered pot. Strain infusion through a clean coffee filter. Place infusion in a pitcher, add lemon juice, sugar and water. Stir well. Chill in fridge at least one hour before serving. Serve with fresh lemon slices and lavender blossoms.
