Ramona Dearing Bolonie Cupcakes

Kevin Phillips' arresting recipe for Bologna Cupcakes

Makes 4 servings

Ingredients:

  • 2 cups mashed potatoes (hot)
  • 1 carrot mashed (hot)
  • ½ tsp butter
  • 4 slices bolonie (1/4" thick)
  • ½ cup green peas (for garnish)

Method

Prepare mashed potatoes and carrot as desired - set aside.

In a skillet, low-med heat, sauté bolonie in butter until centers puffs. Press bolonie in a greased or lined large muffin pan or cups. Bake at 350F for approx 8-10 minutes. On serving plates, scoop 4 oz of mashed potatoes into each bolonie cup and smooth out with a spatula knife. Garnish top with mashed carrot and sprinkle plate with green peas. Here you can have your cake and eat it to.

Ingredients:

  • 4 cups mashed potatoes (hot)
  • 2 tbsp celery (minced)
  • ¼ cup onion (finely chopped)
  • ½ cup green peas
  • ½ tsp prepared mustard
  • Salt & pepper
  • 8 slices bolonie (1/8" thick)
  • Toothpicks

Method

Prepare mashed potatoes as desired. Add celery, onion and mustard. Mix well. Season to taste. Spread 4 tbsp of potato mixture on each bolonie slice. Roll and secure with toothpicks. Place on parchment lined cookie sheet and bake at 350F for 8-10 minutes. Turn mid-way.
