From Your Kitchen - Indian Tacos

3 cups flour
3 tsp baking powder
1 cup cold water (may add more if needed)
Canola oil, enough to make 2.5 - 3 cm level in frying pan

Put the flour, baking powder and water into a bowl, mix until it comes together in a soft dough. Knead into a soft ball.
Heat oil over medium heat
Roll dough out or flatten with hands until about 2.5 cm thick, cut into squares about 5 cm by 10 cm.  Make 1 - 2 slits in middle to allow for quicker cooking.
Test oil by putting a small pinch of bannock dough into oil, if it sizzles and floats to top, oil is ready.
Slide dough squares into oil, be careful not to crowd them.  Fry on both sides until golden brown, about 4-5 mins per side.
Indian Taco.JPGFor Indian Tacos, cook your meat of choice (usually ground beef or chicken) with taco seasonings according to package.  Chop a head of lettuce finely, grate 2 cups of cheese. Top warm bannock with taco-seasoned meat, lettuce and cheese, can add salsa and sour cream if you want.  Eat and enjoy!
