Summer Ingredients - Asparagus

Chef Doreen Prei visited Portia with some suggestions for cooking with asparagus.

Asparagus Salad with Vodka Vinaigrette

Cut and blanch Asparagus for 1 minute in salted boiling water
Cut fresh Tomatoes (can be cherry tomatoes, yellow, orange or red tomatoes)
Season Asparagus and Tomatoes with Salt and Pepper (add freshly chopped chives, optional)

Vodka Vinaigrette

75 ml Vodka
100 ml White Balsamico Vinegar (Italian Centre)
150 ml Cold Pressed Canola Oil
150 ml Extra Virgin Olive Oil
1 Juice of fresh Lemon
Salt to taste
1 Spoon of Honey
1 Spoon Dijon Mustard

Whisk all vinaigrette ingredients in a bowl, or blend in a blender. 

Serve with poached Eggs
It tastes nice with smoked salmon, caviar, bacon or smoked tofu
Serve with Toasted Bread
