Summer ingredients: Peas

Today on Radio Active, Doreen Prei is talking about peas. Here's Doreen's recipe for pea soup: 


1 chopped shallot
100 gr Butter
30 ml Olive Oil
500 gr fresh or frozen green peas
Vegetable Stock
Salt to taste


Sautée shallots in butter and olive oil. Add the peas and cover them with vegetable stock. Season only with salt. Bring once to a boil and purée in a blender with some hot cream until you like the consistency. Some prefer thinner rather than thicker puréed soups.
