Laurie Brinklow's Chocolate Amaretto Cheesecake
2 cups chocolate crumbs
1/4 cup sugar
1/2 cup melted butter
Melt 2 sq chocolate with 2 tbs. butter
1 1/2 lb. cream cheese at room temp
1 cup sugar
2 tsp. amaretto
3 squares semi sweet chocolate
For crust: mix together cookie crumbs, sugar
and melted butter. Press into a 10 inch springform pan.
Cheesecake: mix cheese, sugar, eggs and amaretto.
Mix well then divide in half. Add melted chocolate to one half.
Pour half white, then half chocolate mixture into spring form
pan, repeat using all the batter. Put knife in middle and make
swirls to create marble effect. Bake at 300 oven for 1 hour. Turn
off heat and leave in oven for 1/2 hour.
Let cool. Refrigerate for 4 hours or overnight.
