Southwestern Slow Cooker Leftover Chicken Dinner

Not sure what to do for supper? Reinvent last night's left-over chicken!

Servings: 6
Prep Time: 10 minutes
Cook Time: 4-8 hours

Ingredients

  • 1 cup uncooked quinoa
  • 1 cup black beans
  • 1 can corn kernels
  • 1 cup red pepper, chopped
  • 1/2 cup white/yellow onion, diced
  • 1 tbsp minced garlic
  • 1/2 tsp chili powder
  • 1/2 tbsp cumin
  • 1 tbsp smoked paprika
  • 1/2 tbsp chipotle powder
  • 1 cup bbq sauce (we used a raw honey-based bbq sauce)
  • 3 cups chicken broth
  • 2 cups shredded leftover rotisserie chicken

Optional: corn/flour tortillas for serving, along with toppings such as sour cream, cheese, green onion and cilantro

Equipment

  • Crock Pot

Method

  1. Combine all your ingredients in the crock pot. Mix well.
  2. Set to HIGH for 3-4 hours or LOW for 6-8 hours (or until quinoa is fully cooked through). If you can, stir occasionally.
  3. Serve!
