Got A Can of White Beans? Make A Quick Cassoulet

Little white beans can be transformed into many meals, from soup to white bean pizza dough, but one of my favourite things to do is roast them with fresh sausages and tomatoes for a quick sort of cassoulet. Upend a drained can into a baking dish with fresh or canned cherry or grape tomatoes, a few fresh Italian sausages and a sprig or two of fresh herbs and bake until the sausages are cooked through, having split open and spilled their juices into the tomato-y beans. It’s so easy, it will quickly become a standby. Measurements don’t need to be accurate, and the ingredients can easily be doubled to feed a larger group — even if you just want to bump it up a bit, a 19 oz (540 mL) can will give you about 2 cups of beans.

You'll need:

  • 1 14 oz (398 mL) can navy or white kidney beans, rinsed and drained
  • 1 14 oz (398 mL) can cherry tomatoes (with juice), or 1 cup fresh cherry or grape tomatoes
  • 2-4 fresh Italian or chorizo sausages
  • a splash of olive oil and balsamic vinegar
  • a couple sprigs of fresh thyme or rosemary
  • salt and freshly ground black pepper

Preheat the oven to 400˚F. Pour the beans and tomatoes into a baking dish or pie plate and nestle the sausages into them. Drizzle with olive oil and add a splash of balsamic vinegar. Tuck in a couple sprigs of rosemary or thyme and grind over some salt and pepper.

Bake for 20-30 minutes, or until the sausages are cooked through. Serve with the saucy beans.

Serves 2-4.
