World In One City Recipe: Nigerian Vegetable Soup
Nigerian Vegetable Soup Edikang Ikong (Akwa Ibom and Cross River) / Ofe Ugummanu (Igbo)
1 bunch spinach, rinsed
2 large tomatoes
2 small red onions
beef
smoked fish
goat meat
cow foot
dry Pepper
salt (to taste)
2 tbsp ground crayfish
1 tbsp palm oil
2 Knorr or Maggi bouillon cubes
Wash and cut the beef and goat meat to small pieces. Boil the smoked fish to open up the inside meat which you will use for the soup.
Boil the meat or fish with the salt, dry pepper, onions, tomatoes, maggi until the meat is tender and keep on medium heat to boil. Blend your crayfish and add two to the boiling soup. Separate the spinach leaves. Wash them, drain them and cut them. Drain as much water as your can. You could steam the spinach or put it into the microwave to take out the excess water. You need as little water as possible. Once meat is tender (30-45 minutes) - depending how soft you like your meat start adding the spinach. Turn down the heat to low and cover pot for 5 minutes.
Now it is ready to serve with Garri (Eba), Semolina, Amala, or Pounded Yam.

World In One City Recipe: Palaak/Saag Paneer
Here's the recipe:
Palaak/Saag Paneer
500g fresh or frozen palak (spinach)
200g Paneer
2 onions
1 tbsp grated ginger
1 tbsp garlic paste
5-6 tbsp oil
1 tsp ghee, oil or butter
garam masala to taste
red chili powder to taste
1 tsp cumin powder
1 tsp salt
Love!
Cilantro for garnishing
Clean and wash palak (spinach) nicely. Boil the spinach in water and cool it. Now mash it in a mixer.
Heat oil in a kadai/ deep frying pan. Add ginger-garlic paste and stir-fry for a minute. Now add onions and fry till golden brown. Add all spices except red chili powder. Now add the spinach (palak) and little water if needed and cook for 4-5 minutes.
Cut paneer into pieces. (Paneer can be fried to golden brown in a seperate pan or can be used as it is). Add Paneer pieces to the gravy and cook until done.
Just before serving, heat pure ghee in a small pan. Hold the pan over bowl, add chili powder (Caution: Don't allow chili powder to burn!) Immediately pour on the indian palak paneer. Eat with fresh roti and someone you love!

World In One City Recipe: Ma Po Tofu
The Recipe:
Ma Po Tofu (Pock-Marked Silken Tofu)
1 container of Silkie Soft Tofu (850 grams)
1 lb ground pork
1 tbsp fermented black beans (Yang Jiang)
1 thumb-sized nub of ginger (minced)
3 - 5 cloves of garlic (minced)
2 tsp ground dried chilies or fresh bird chilies (optional)
2 tbsp canola oil
1 tsp white pepper
1 tsp salt
1 tsp sugar (or 1 tbsp mirin)
2 1/2 tbsp chilli bean paste*
2 tbsp shoaxing cooking wine
2 tsp light soy
1 c stock
2 tbsp cornstarch mixed with 3 tbsp of water (slurry)
1/2 tsp toasted Sichuan peppercorns
2 green onions
1 bunch of cilantro
1 teaspoon of chili oil (or more if you like heat)
Sandwich tofu between paper towel on a drying rack or plate and place a plate on top to squish out excess liquid in the tofu. Rinse black beans under cold water and place in a mortar, along with ginger, garlic and optional chilies. Bash about to form a paste.
Place Sichuan peppercorns into your wok and heat up your wok on high heat. Once the peppercorns become fragrant (about 10 -20 seconds) take them out of the wok and let them rest on a small saucer. Make sure not to burn the peppercorns.
Test the heat of the wok with a dribble of water, it should sizzle and evaporate on contact. Swirl 2 tbsp of canola oil into the wok and immediately add the ground pork spreading it evenly on the bottom surface. Let brown undisturbed on high heat for about 30 seconds and add a pinch of salt, sugar and white pepper.
Add paste from the mortar to the pork and stir, lowering the heat to medium high to prevent burning. Add shaoxing cooking wine and continue stirring pork. Add chilli bean paste to the pork and stir to integrate.
Remove the tofu from the paper towel sandwich, and cut into 2 -3 cm square cubes and gently place into the pork mixture. Gently mix the tofu with the pork. I prefer shaking the wok and tossing the tofu with wok spatula. Add soy sauce. Stirring with a spoon will most likely break the tofu. The trick is to be very gentle.
Put the wok back on high heat and add stock. Once stock bubbles, the heat can be lowered to medium for a more gentle simmer. Add cornstarch slurry and gently stir to integrate and thicken stock.
Grind Sichuan peppercorns in the mortar and pestle and set aside. Finely chop green onions and cilantro. After the tofu has simmered for about 5 minutes transfer to a large bowl. Top with green onion, cilantro, ground Sichuan peppercorns and chilli oil.

World In One City Recipe: Liver and Bananas

Liver and Bananas
1 pound beef liver, washed and cut into cubes
1/2 lime
1/4 c vinegar
1 tsp black pepper
1/4 tsp salt
1 tsp seasoning salt
1 onion, chopped
1 tsp fresh thyme
1/2 scotch bonnet pepper , chopped seeds removed
1 head of garlic, chopped (1/2 if you don't like too much garlic)
1 tbsp Jamaican browning sauce*
2 tbsp oil
1/2 dozen green bananas* (must be cooking bananas)
Take a medium sized mixing bowl and fill half-way with water. Squeeze in half the lime and vinegar into the water. Wash the liver in water, drain, and wash again in fresh water. Drain again. To the bowl of liver, add the black pepper, salt, seasoning salt, onion, thyme, garlic and browning. Cover and let marinade in the fridge overnight.
Heat oil in a pan on medium heat. Pour in the marinaded liver, cover and cook for 10 minutes. add 1/4 c water, stir, and cook until the mixture starts to simmer. Reduce heat and let cook covered for 15 minutes.
While the liver is simmering, fill a medium sized pot half-way with water and put on the stove to boil. Using a sharp knife, cut the ends off of the green bananas, and then a slit length-wise down each of the bananas so that the flesh is exposed. Drop the bananas with the skin on into the boiling water. Cover and cook for half an hour over medium heat. Bananas are done when you pierce them with a fork and the bananas are the texture of a baked potato.
Drain bananas, remove the skin and serve with the cooked livers.
*Green bananas and browning sauce can be found at any Caribbean or Filipino grocery store.

The Weekender - Embracing the Cold

- The RCMP is holding its annual Musical Ride Stables Open House tomorrow. Starts at 10 a.m. This is the 15th anniversary of the event.
- The poetry festival Verse-Fest packs a lot of spoken-word/slam/traditional readings into its last weekend. It's all happeneing at Arts Court, the Mercury Lounge and the NAC.
- Also tomorrow, Raw Sugar Cafe is hosting its Stars on 45 DJ night. Thirteen guest DJ's are lined up to spin 15 minute sets all night.
- On Sunday, Zaphod's launches its week-long celebration of turning twenty years old. Go to the website to see if any of the bands catch your fancy.
- And this weekend, the Canadian Museum of Nature opens its whales exhibit. The show stopper is the skeleton of a 58 foot long male sperm whale for people to awe over.
