World In One City: Ceviche Recipe

Peru 002.jpgCeviche (As per Miguel Mostaceros' recipe)

400grams of boneless fish filets

2 c fresh lime juice (approximate)
1 red onion
1-2 hot peppers
2 c boiling water
A handful of minced fresh cilantro


Cut the fish in chunks of about 1" by ½" thick.
Place in a hardened plastic bowl and add the boiling water to the fish and let it rest for no more than 30 seconds or when the fish starts to change colour.
Toss the water out and place the fish in the fridge for about 10 minutes.



Add the lime juice to the fish. Slice the hot peppers, but take the seeds out first. Slice the red onions into very thin rings.
Add everything to the fish bowl. Add the cilantro and finish with salt and pepper to taste.
Let it rest for 20 minutes before serving. Dish is better serve at room temperature or slightly colder.
It can be served with thick slices of boiled sweet potatoes or corn cobs.
