Chef Bruce Wood on beets and zucchini

I first met Chef Bruce Wood at his restaurant on Salt Spring Island.  It's called Bruce's Kitchen and for a very good reason.  His workspace fills about a quarter of the space and from every table you can watch him and his crew creating your wonderful meal.

I was lucky enough to be there on a Friday night which means getting a chance to eat a wonderful set menu at a communal table.  It was a wonderful experience. It was around the time of St Patrick's Day and so every course had an Irish theme.  Each was delicious and surprising. What sticks in my memory now is the cheese cake with the addition of Bailey's and a toffee sauce that I dearly wanted to lick from the plate!  We enjoyed the food and the chance to meet so many great Islanders at our table.

Chef Bruce has been passionate about cooking with local ingredients in season since he began his career in Ontario.  Since moving to Salt Spring he's been filling his menus with the bounty of local farms and wineries and cheese makers.
