  Chocolate Hazelnut Pancakes

  My wife makes the best caramel pancakes:

  • 1 1/2 cups of flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbsp melted butter
  • 1/2 cup of Nutella Chocolate Hazelnut spread

  Mix together flour, baking powder, salt and sugar. In a separate bowl mix egg, milk, and butter.

  Combine ingredits from both bowls. Mix together, but do not over mix. Swirl in Nuttella (you may need to soften in the microwave for 10-15 seconds). Cook approximately ¼ cup at a time, on heated griddle. Serve with whipped cream! Enjoy!

  Carrot Cake Pancakes

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons finely chopped pecans
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • Dash nutmeg
  • 1 egg, lightly beaten
  • 1/3 cup packed brown or granulated sugar
  • 1 cup milk
  • 2 cups finely grated carrots
  • 1 teaspoon vanilla extract

  Cream Cheese Spread

  • 4 ounces cream cheese
  • 1/4 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1 dash ground cinnamon

  In a bowl, combine flour, pecans, baking powder, cinnamon, salt, ginger, and nutmeg.

  In a separate bowl, combine egg, brown sugar, milk, carrots, and vanilla; mix well.

  Stir carrot mixture into dry ingredients until moistened. Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on the top of pancake; flip and cook until golden brown.

  For topping, blend cream cheese, powdered sugar, milk, and vanilla until smooth. Sprinkle with cinnamon, and serve with pancakes.

  Serve for breakfast or desert. They're also great re-heated in the toaster, yummmmm...

  Here's a killer recipe!

  • 1 1/2 cups whole wheat flour
  • 3 tbsp brown sugar
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups buttermilk
  • 3 tbsp unsalted (melted) butter
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon

  blueberries, coconut, chocolate chips and bananas optional

  Mix dry ingredients. In a separate bowl, mix dry ingredients. Blend them together with a wooden spoon. Cook on a griddle or in a frying pan over medium heat. Serve with Maple syrup and whipped cream.

  For awesome results, make a huge batch of small pancakes with each of the above 'optional' ingredients, and mix and match your breakfast!

  Newfoundland Berry Pancakes with Maple Whipped Cream

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 2 large eggs, lightly beaten
  • 3 cups buttermilk
  • 1/4 teaspoon vanilla
  • 4 tablespoons unsalted butter, melted, plus 1/2 teaspoon for pan
  • 2 cups Newfoundland berries (partridge and/or blueberry)

  Heat pan or griddle. Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl. Add eggs, buttermilk, and 4 tablespoons butter; whisk to combine. Batter should have small lumps. Test griddle by sprinkling a few drops of water on it. If water bounces and spatters off griddle, it is hot enough. Using a pastry brush, brush remaining 1/2 teaspoon of butter onto griddle. Wipe off excess. Using a ladle, pour pancake batter (about 1/2 cup per pancake).When pancakes have bubbles on top and are slightly dry around edges, about 2 1/2 minutes, flip over. Cook until golden on bottom, about 1 minute. Repeat with remaining batter.

  Maple Whipped Cream

  • 3/4 cup heavy cream
  • 1/4 cup sour cream
  • 1/4 cup pure maple syrup

  Whip heavy cream and sour cream at high speed, in a large bowl until soft peaks form, about 2 minutes. Add maple syrup in a steady stream; continue to whip until maple cream is thick and velvety, about 1 minute more, chill about an hour. Top warm pancakes with maple cream and berries, drizzle with more maple syrup, and serve.

  Serves 6

  • 4 ripe peaches, peeled if desired, divided
  • 2 cups reduced-fat all-purpose biscuit and baking mix (such as Bisquick)
  • 1 1/2 cups apple juice
  • 1 egg, slightly beaten
  • 1 cup chopped peaches. (Use one of the peaches from above for this) Slice remaining 3 peaches; set aside.

  In a medium bowl, combine baking mix, juice and egg until just moistened. Stir in chopped peach.

  Heat griddle or skillet over medium heat; coat with spray oil (veg. or olive oil) or nonstick spray. Butter can also be substituted for the oil. By the spoonful, pour batter onto griddle until pancake is desired size; spread out mixture slightly with the back of spoon. Cook until bubbles form on top and underside is golden brown. Turn pancakes; cook until golden brown. Top with peach slices.

  Per serving: 221 calories; 5g protein; 3g fat; 43g carbohydrat; 2g fiber; 477mg sodium; 35mg cholesterol

  Optional: Mix 4 tbspns. maple syrup with peaches for an even tastier treat. Top with whipped topping.

  Hi this is the best no fail pancake recipe that my wife MaryAnn uses.

  • 1 1/2 c flour
  • 3 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3tbsp. sugar
  • 1 egg
  • 1 1/4c milk
  • 3 tbsp melted butter
  • 1/4 tsp vanilla

  Mix dry ingredients.Beat egg thoroughly and add milk.Make a well in dry ingredients,slowly add egg & milk mixture.Mix only enough to make smooth.Add melted butter and flavouring. You can also add Blueberries or other fruit. For best results use electric frypan set at 175c/350f. Enjoy I sure do.

  Fluffy Pancakes

  Ingredients

  • 2 eggs lightly beaten
  • 1 cup buttermilk
  • 1/2 cup melted butter
  • 1 cup all-purpose flour
  • 1 tablespoon brown sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup rolled oats
  • 1/4 cup dried bran
  • 1/2 teaspoon cinnamon
  • pinch of nutmeg
  • 1 tablespoon butter for griddle

  Directions

  1. Preheat non-stick griddle.
  2. Place eggs, buttermilk, and melted butter in a medium bowl and mix well.
  3. In a large bowl combine flour, sugar, baking powder, cinnamon, nutmeg and salt. Sift all the dry ingredients well and add the oats and bran.
  4. Add the wet ingredients to the dry and gently incorporate.
  5. Melt butter evenly on hot griddle and spread all over grill.
  6. Ladle pancake mixture onto griddle.
  7. Cook until pancake is golden brown.
  8. Serve with syrup and fresh fruit.

  Buttermilk Pancakes with Maple Syrup Apples

  Ingredients

  • Maple Syrup Apples:
  • 2 tablespoons(1/4 stick)unsalted butter
  • 3 large Golden Delicious apples, peeled, cored, cut into 1/2-inch-thick slices
  • 1 tablespoon plus 1/2 cup pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • Pancakes:
  • 1 cup all purpose flour
  • 2 tablespoons yellow cornmeal
  • 2 tablespoons (packed) golden brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup plain whole-milk yogurt
  • 1 large egg
  • 1 1/2 tablespoons unsalted butter, melted
  • Additional unsalted butter
  • Additional pure maple syrup

  Preparation:

  • For maple syrup apples:
  • Melt butter in large non-stick skillet over medium-high heat. Add apples and 1 tablespoon maple syrup; sauté until apples are tender, about 5 minutes. Mix in remaining 1/2 cup maple syrup and cinnamon.
  • For pancakes:
  • Combine first 6 ingredients in large bowl; whisk to blend. Whisk buttermilk, yogurt, and egg in medium bowl to blend; add to dry ingredients and stir until just blended but still lumpy. Gently mix in 1 ½ tablespoons melted butter.
  • Heat griddle or large non-stick skillet over medium heat. Spread thin coating of butter over skillet and let melt. Working in batches, drop batter by 1/3 cupfuls onto pan, spacing apart. Cook pancakes until brown on bottom and bubbles form on top, about 3 minutes. Turn pancakes over and cook until bottoms are brown and pancakes are barely firm to touch. Transfer to plates. Repeat with remaining batter, adding more butter to skillet as needed. Spoon apples over pancakes. Serve, passing additional maple syrup.
