It was Houston's fourth consecutive victory, a streak extended to five with a 1-0 win over the Kansas City Wizards on Sunday.
Against Chivas, David took a pass from Wade Barrett and scored on a rising shot to the upper right corner in the 55th minute.
Davis slipped a low shot past goalkeeper Brad Guzan for his second goal in the 70th minute before completing the hat trick on a penalty shot five minutes later.
Davis has posted three goals and three assists in 13 games this season, his sixth in the MLS.
The native of St. Charles, Mo., has totalled 18 goals and 32 assists in 138 games, including 110 starts, with the MetroStars, Dallas Burn, San Jose Earthquakes and Dynamo.
Striker Dwayne De Rosario of Scarborough, Ont., is the other Dynamo player to win MLS weekly honours this season.
