A new factory about to open in Winnipeg's North End aims to make fine cheeses with Spanish and South American influences.

Pedro Campayo says he expects to open Whiteshell Dairy Foods Ltd. on Dufferin Avenue in the coming weeks, after his business gets final approval from the Canadian Food Inspection Agency.

Campayo hails from Venezuela, where his family has been in the cheese business for about 40 years.

He said the $6-million plant will have 25 employees and produce and sell mozzarella, parmesan and a number of specialty cheeses locally and across Canada.
